Although honey tastings may not yet have the cachet of sampling wine, beer, or chocolate, at least now the vocabulary is in place. The University of California, Davis, Honey and Pollination Center has created a flavor and aroma wheel for honey with 96 descriptions identified by trained tasters and a sensory scientist. Aside from fruity, floral, and herbaceous flavors, there’s a much more exotic collection of possible scents, including artichoke, burnt toast, whiff of barnyard—even cat pee. “Our goal is to help consumers come to understand what makes each honey unique,” according to the center’s website. “The Wheel will help them understand what they prefer and to help them give words to that experience.”
